Pickles

This weekend I am embarking on a pickling journey. I have been cutting up and saving some watermelon rind in order to pickle it. I don’t know why but the idea of pickling foods appeals to me. I believe it stems from my childhood memories of my grandmother making the most amazing bread and butter pickles. I could eat an entire jar of them. Whenever she ran out of pickles to eat she would buy me those baby gerkin pickles to snack on. The sweet and tart flavor of pickles just brings me back to a simpler time in life. I have already pickled some turnips which are rather interesting in texture and flavor. I don’t mind eating one here or there but they are certainly nothing I would gobble up an entire jar of. I will be interested to see if pickled watermelon rind lives up to the image in my head.
